Extract Structured Data from Invoices

<p>This example workflow demonstrates how to extract structured information (e.g., invoice number, date, customer name, total amount, IBAN, email) from invoice texts using the <strong>Document Entity Extractor</strong> component and an OpenAI LLM. The workflow takes unstructured invoice documents and a list of entities as input, and produces a table with the extracted values.</p><p></p><p>This workflow can be adapted to any type of document (contracts, receipts, letters) by changing the input text and the entity list.</p>
